have been restoring the car seats for the last two days and about half way there with it. i also fired some heated seat kits in the front seats for that extra bit of luxury.
the product i am using is a leather restoration kit from furniture clinic... cost me about £100 and looks to be working well. would recommend this product if your thinking of doing your own seats. The heated seats kit was about £25 from ebay.
will be putting the photo's of the finished job on Facebook.... only the steering wheel and back seat left to do.

Cool, I did this too. Took a bit of work removing all the hog rings. Not easy. I found the pads to be quite tricky to fit, I don't think they don't quite cover as much area as OE, but still good.
Whilst off, cleaned the leather with natural soap which gets rid of the horrible hard shine and all the previous leather products which just builds up on the surface imo.
Not wired the seats in yet as wanted to connect them to the 30A heated seat fuse and have it so the proper heated seat warning light comes on on the dash!
Kinda hoping I would have found an unused connector under the carpet but no luck. Interested to know how you did it or if anyone has the circuit diagram for doing this?

I took the ground from one of the seat bolts with an eye if I remember correctly and the live from a switched live. With an inline fuse. Not sure about the setup you have, but an inline lamp should not be too difficult to put inline. Just a bit more wire to hide/route The ground is fixed (seat bolt so does not move) whereas the live, leave enough cable for moving the seat back and forth. And insulate. I gave mine a lazey loop and checked it would not foul, enabling the seat full travel in either direction, just in case.

my face book page has the photos if you want to see the progress on my car... my face book name is chris eyre and profile picture is my with no shirt on holding the pet dog, a springer spaniel...
for the heated seats i have just run in some wires direct to an inline fuse then onto the battery... the switches for the heaters have got there own lights on them, currently there is the possibility to use them / leave them on while ignition is off.. so may just change the wiring to prevent that.
