If I bought something like this Cupra What would I have to do to get it ready for the track? Could you just remove the back seat and add some Toyo tyres? Is a roll cage and harness belts really necessary?

You don't have to do anything other than make sure it is safe to drive. You do have to wear a helmet though, so worth getting one. The fit is the most important.
Removing weight is an option, but sometimes it's better to have some weight over the rear wheels for grip. I remember the Fiat Coupe is rather twitchy at the rear under braking before Avon Rise at Castle Combe ! Mind you, I was doing 101mph according to GPS !
The Leon Cupra is a great car.

You should be able to pick some up very cheaply - us racers have to change them so stupidly frequently- mine look almost perfect when they are out-of-date for racing

If you fancy doing one of those track-day driving experiences, I'd highly recommend the "formula silverstone" experience at Silverstone. It's essentially a formula Ford open wheeler, and because it is a single seater, you do not have an instructor in the car with you. They give you a short introduction and safety briefing in a classroom, and then you get to do a few laps behind a safety car. Then the lights go green and you "race" everyone else for about 15 minutes. It was a lot of fun and way better than the Ferrari experience I had beforehand on the same day. My memory from the Ferrari experience was of the instructor constantly telling me to change gear sooner so I didn't rev the engine.

When I had a "supercar experience" in an Ariel Atom, the instructor (also the owner) got seriously miffed when I locked up a front wheel while diving up the inside of a Lambo. He told me I was "driving too fast".... I politely pointed out that they were meant to be driven hard and were built to take it. I also pointed out that if he hadn't fitted Nexen tyres on it, I wouldn't have snatched a brake and we'd have gone even faster. TBH, I can understand owners wanting drivers to drive at 7/10 or less, simply so that less wear & tear occurs. This is why the best ever driving day I've ever done was the full PalmerSport experience at Bedford Autodrome. The instructors quickly work out the driver's capabilities and instruct accordingly. My instructors tended to be shouting "FASTER!" and "DON'T BRAKE..." for a lot of my session. In the end, I span the two-seater "LMP" car at about 120mph and when the world stopped rotating, the instructor was laughing, saying that he was having a great time. TBH, once they've sussed that a driver has decent enough skills, they will keep pushing so that the customer comes away completely exhilarated. The only cars I didn't spin on the day were the single seater, the M4 and the Defender. I span both Caterhams (twice), the Atom and the LMP, all because the instructor kept pushing me until I stepped over the limit. Cost is prohibitive at nearly a grand, but I'd be willing to bet that I had twenty or thirty times more fun than a £100 "experience" for three sedate laps in a Lambo, Aston or Ferrari

We were crying with laughter by the end. He asked me where I learned to drive like that and I replied "On the Caterhams back there!" - he wrote "Great Saves" on the sheet. When I drove the LMP, the instructor wrote "ditto". They are the best days but painfully expensive.

I recently enjoyed a mornings driving at Thruxton. As an experience it was exceptional. Good value for money and real enthusiasm for pushing the cars.
I drove a Cayman, R8 and a single seater Renault. 15 laps in total with three being driven round in a VRS,
Coupe now sold!
