Anybody know who does trackdays where you can hire a car too? A friend wants some experience and tuition and neither of us have appropriate cars (my race car is far too noisy and a bit too hard-core for this task).

Bookatrack do track days and R300 hire. Not cheap but very highly regarded. I think Focused Events do it too, but I wouldn't recommend them.

Really want something where we could pitch up and use something like a Mini Cooper S for half a day or full day at our leisure on a track day.

R300 is probably a bit hardcore - not ideal for coaching either. That's the problem with my track car: a bit brutal and incredibly noisy.

When Mark Hales coached me, we used his Passat 1.9 TDI (still had us up the chuff of Evos through the Esses at Cadwell).

I suppose Hertz is an option but not one I really want to use....
