It would effect the rigidity of the body shell and safety of the vehicle + the handeling would suffer too due to more flex in the body shell. Don't Do It!

it wouldnt be to hard to strengthen the area so it could be cut out

I think the tricky part would be converting the larger seat into a folding version. Do you know of any other seats that would fit ? When the bolts are removed from the rear of the larger "non folding" side of the rear seat, it actually folds as well, would just be a matter of fitting a quick release catch like on the other side.
