I notice you put this in the styling section.
If thats your angle I think you can get pretty good looking air/fuel ratio gauges, don't think they really tell you much though. Oil temp and exhaust gas temp I understand can be handy though.

If you're going to add some horsepower, you should have : Boost gauge, Air Fuel Ratio and Exhaust Gas Temperature if not, then only boost gauge, oil température and Air Fuel Ratio

I'd go for Exhaust Gas Temperature. It tells you when things are (starting to go) wrong. All the others for me are just analysis tools, excuses or race car equipment.
Oil temp: if you do a decent warm-up (20km) then you don't need it. Other than warm-up it will just scare you when you see it goes into the red when you floor it or are stuck in traffic after a good blast. Which it does on a 20vt.
AFR: you can't change it on the fly and if you have a good ECU setup it's nothing to worry about... Plus, if it's wrong (due to injectors, air leaks, faulty sensors,...) it'll show on the EGT as well.
Boost: well okay if you want to play with a boost controller, but... ahah... if you have a good boost controller it will also have a boost display.
